Chicken Italian Tomato Bake

This dinner dish is absolutely delicious. It really pairs well with pasta and even throw in some garlic bread and you are all set! I really love Italian food and wanted to make something that is both easy and yummy. You also can't go wrong with fresh basil and mozzarella, I mean it is a match made in heaven. Chicken Italian Tomato Bake

Ingredients

4 Chicken Breasts

2 ½ Tbsp. Butter

1 tsp. dried basil and parsley

2 tsp. dried oregano, salt, and black pepper

3 tsp. garlic salt and onion powder

3 cans Italian diced tomatoes

1 onion chopped

5 leaves fresh basil chopped or cut in strips (optional)

1-8 oz. fresh mozzarella ball

1 box of Cellentani pasta

Instructions

Using your seasonings: parsley, basil, oregano, garlic salt, onion powder, black pepper, and salt; sprinkle on top of the 4 chicken breasts both sides. Whatever seasonings you have left save to season the tomatoes. In a hot pan place your butter in it and let melt. Add your seasoned chicken breasts in the hot pan and sear on both sides till it’s a nice golden brown. In a 13X9 pan add your 3 cans of Italian diced tomatoes, sprinkle in your seasoning and stir. Remove your chicken from pan and place in your pan with the tomatoes. In the same pan you seared the chicken, place your chopped onion in pan and cook until carmalized. Once caramelized sprinkle onion on top of chicken. Take half of the fresh basil your chopped and sprinkle on top of pan cook in oven at 375F for 30 minutes. Take out and place your chunks of mozzarella on top with rest of basil cook for an additional 10 minutes, or until cheese has melted.

For pasta put water and a dash of salt in a pot place on stove. Once water starts to simmer add your pasta, cook until tender. Drain your pasta, but DON’T rinse your pasta otherwise your sauce won’t stick to the pasta. Enjoy.
